My Pie


An absolutely lovely looking blackberry pie is cooling off on the kitchen window sill. Man...that looks good.

The filling was relatively easy to make. I rinsed my 3 pints of blackberries, put them in a pot, mixed in 1/2 C brown sugar and 1/4 cup cornstarch, and cooked the mixture on low/medium heat for about 15 minutes until it was bubbly and thickened.

The crust was similarly easy. I took 1/2 C oats and mashed them up with my hands. I added 1 1/3 C graham cracker crumbs, a sprinkle of salt, 2 T brown sugar, 1t vanilla, and 5 T melted (unsalted) butter. I mixed all that together and pressed it into a pie pan and baked it at 350 F for 6 minutes.

After the filling and crust cooled, I put the filling in the crust and baked it at 350 F for about 40-45 minutes. Once the pie cools off, I will slice myself a big fat piece of it to taste test.

I hope it tastes as good as it looks!
