Yesterday when I opened my inbox I had an email from Heidi Swanson from 101Cookbooks.com telling me about her wonderful Unfussy Apple Cake. I had everything I needed but apples and eggs. I ran to the corner market, and was back in my kitchen mixing stuff together toute suite.
I made a whole cake in a large-ish pan. But when it came time to take a picture, I had only one mere square left. Most of it went to my landlord and his wife. I love to cook, but I don't need to eat an entire cake. The only "Kirsten improvements" I made to the recipe were to add wheat bran (about a cup) and chopped up figs (a handful and a half). I also had to substitute drinking yogurt for the buttermilk (and I added a bit more to balance the additional bran).
Very delicious. Especially when topped with a spoonful of Mascarpone cheese (the sweet Italian soft cheese that makes tiramisu, well, tiramisu).
