To do the individual cheesecakes, I utilized my muffin pan. After pressing in crust for three of the cheesecakes, I realized that it might be a bit tough to remove them intact. The aluminum foil worked really well. My landlady was quite impressed. She'd never had cheesecake before.
However, the real coup was the making of the corn tortillas.
I don't have a tortilla press, but I did go out and buy a round cutting board and a rolling pin. I bought corn flour yesterday afternoon from a guy who ground the corn up right before my eyes. I wish I'd had my camera...He's got a huge, Kirsten-sized stone grinder that's powered by the river running through the middle of Prizren. The next time I buy corn, I'll take the camera because it's truly cool.
My tortillas were misshapen and small (although some were misshapen and larger), but they tasted fabulous. I mashed up kidney beans (with cilantro and cumin); fried up some purple onion, green peppers, and zucchini (with cumin and garlic); grated some cheese and carrots for the top...very, very tasty. The tortillas were a slight pain, but I would do them again in a heartbeat. Corn tortillas! In Kosovo! (I'm pretty impressed I was able to do this, even though it was fairly simple: corn, water, mixing, kneading, rolling, plastic wrap, and a hot pan.)

Wow, that taco-ey thing looks good. Making em hungry, and it's only 9 am here.
For the cheesecakes - cream cheese pretty standard there?
